Meatball Sliders
There are actually 2 ways to make these...the fast way and the faster way...
The faster way:
Use frozen meat balls - I use the Italian style, they are a bit smaller, pour a bunch in a pot of your favorite sauce, basically all you are doing is warming everything up.  Use your favorite cheese, I use shredded mozzarella cheese because my boys like 'messy cheese' but you can use sliced cheese, provolone cheese muenster cheese, whatever you like.  You'll also need dinner rolls, I used yeast rolls from the bakery so they were nice and fresh.  Once the meatballs are warmed through just slice open the rolls, put 2 meatballs on the roll with a bit of cheese and dinner is done.  If you're a health nut and have the time you can serve it with a salad, if the serving of veggies you get in the Ragu or Prego spaghetti sauce is good enough for you as it is for me, dinner is served ;)

The fast way is to roll your own meatballs, it really only takes a few extra minutes, but you do have to actually cook the meat and drain the fat (at least I do).  When I have time I'll do it this way but usually I just use the frozen meatballs since this is one of my go to fast dinners.

Hot Fries
You can use any potatoes, my favorite are either Yukon gold or Red potatoes because they tend to cook faster; Use about 1 medium potato per person.  Just peel and then cut in 1/2 long ways then slice, kind of on the thick side and put in a large bowl.  Put in some Extra Virgin Olive Oil, I just pour around the bowl a couple of times, enough to coat very lightly, throw in a little sea salt (you can use any salt), paprika, chili powder, cayenne pepper (if you like it spicy), onion powder, and garlic powder.  Toss with your hands, because of the spices I use food prep gloves.  Spread potatoes in a single layer on a cookie sheet sprayed with cooking spray.  You can bake these with at virtually any temperature, I put them in the oven on the bottom rack with fish on the top at 325 for around 30 minutes, just watch after around 20 minutes so they don't get too crispy; I've also put them in with chicken at 400 degrees and cut them thicker cooking for 25-30 minutes.
I've often thought of making garlic fries with just the garlic powder and onion powder but haven't gotten around to it yet.

Basil Fries (AKA OSU Fries)

Spread potatoes in a single layer on a cookie sheet sprayed with cooking spray.You can bake an virtually any temperature.  I put them in the oven on the bottom rack with the main dish on top.  325 around 30 minutes; 400 maybe 20 minutes.
